You will need:
300g Plain flour
150g Butter
150g Caster Sugar
80g Sprinkles
1 Egg
1 Teaspoon Baking powder
1 Teaspoon Vanilla Extract
Method:
Firstly in a bowl, to your flour, add the caster sugar and baking powder and mix until well combined.
Then add the butter and mix in with the tips of your fingertips until it resembles breadcrumbs.
Then add most of the sprinkles, keeping a small amount to one side to top the cookies with later. Then mix in.
Then add the egg and vanilla extract and mix well until a dough has formed.
Then line a baking tray with baking paper. Roll about 2 tablespoons worth of dough into a ball and put on the tray making sure to leave space in between each ball as they will expand as they bake.
Press down on the top of each cookie to slightly flatten it, then top with sprinkles and press down to secure them.
Then in a pre-heated oven at Gas Mark 5, 190C or 170C fan assisted bake for 12 to 16 mins until the sides are starting to go golden.
