You will need:
500g Puff Pastry
7 to 8 Sausages (or 500g of sausage meat)
1 Egg (beaten)
Approx 6 Black Olives
Method:
Set the oven to Gas Mark 6 / 200°C (170°C fan).
Dust your work surface with flour and roll out the puff pastry.
Slice into long rectangles, remove the sausage skins, and place them lengthwise on the pastry. Roll the sausages in the pastry without overlapping.
Cut into desired sizes, fold the pastry over each end of the sausage rolls, and position them seam-side down.
Slice the remaining pastry into long, thin strips and cut the olives into rounds.
Beat the egg and brush it over each sausage roll.
Place two olive slices on top of each sausage roll for eyes, then wrap the thin pastry strips around them as bandages.
Arrange on a baking tray lined with baking paper and brush with egg wash again to cover all the pastry.
Bake in the preheated oven for 35 minutes or until the pastry is golden and fully cooked.
