How to make Mini Cheese Quiche

You will need:

For the Pastry:

200g Plain Flour

130g Butter

1 Egg

1 tbsp water


For the Filling:

100g Grated Cheddar Cheese

2 Eggs

125ml Double Cream


Method:

  1. Firstly we will make the pastry. In a bowl, mix together your flour and butter with the tips of your fingers until it resembles breadcrumbs.

  2. Then add the egg and mix. As the mixture comes together as a dough you may need to add water to help bring it together, only add a little bit at a time. Then chill in the fridge for about 30 mins.

  3. The on a pre-floured work surface, roll your pastry out. You want to have a thickness of about half a cm.

  4. Then prepare your cupcake tray by greasing with butter and lining each hole with a strip of baking paper.

  5. Then cut out your pastry using a circle cutter that is slightly bigger than your cupcake tray and line each hole in your tray with them.

  6. Then to make the filling, mix together the double cream and eggs until well combined.

  7. Fill each pastry case with grated cheese and then fill each case with the cream mixture.

  8. Bake in a pre heated oven at Gas Mark 5, 190C, 170 Fan bake for 20 to 25 minutes.
