How to make Blueberry Butterfly Cupcakes

You will need:
For the Cupcakes:
175g Self Raising Flour
175g Caster Sugar
175g Margarine
3 Eggs
150g Blueberries (Fresh or Frozen)
For the buttercream:
175g icing sugar
75g Butter
2 tbsp Milk
Method:
For the cupcakes; firstly in a bowl, cream together your margarine and sugar.
Then add your eggs and mix well.
Then add the flour and mix until well combined.
Then mix in the blueberries until well distributed.
Then divide your mixture between 12 cupcake cases, and bake in a pre-heated oven at Gas Mark 5, 190C or 170C fan assisted for about 16 to 20 mins.
To make the buttercream, Make sure the butter is at room temperature.
Then to the icing sugar add the butter and push the butter into the icing sugar using a fork. This should help keep the icing dust down.
Once the butter and icing sugar are as mixed as they can be, add the milk as required until it is a smooth buttercream. If you add too much liquid, add more icing sugar to bring it back.
To the cupcakes, cut out the centre of each cupcake and fill with the buttercream. To the middles you cut out, cut in half and place on top so it looks like a butterfly.
Then if you want sprinkle the tops with icing sugar.
