You will need:
200g Sultanas
100g Raisins
100g Currants
100g Candied peel (or substitute Sultanas, Raisins, Currants and Candied peel for 500g mixed fruit)
200g Chopped Apple (Approx 1 large or 2 small)
1 Orange (or substitute for 4tbsp orange juice)
Half a Lemon (or substitute for 1.5tbsp lemon juice)
200g Brown Sugar
1 tsp Mixed Spice
Half tsp Grated Nutmeg
Half tsp Cinnamon
100ml Brandy
Method:
In a bowl, mix together your currants, raisins, sultanas, candied peel the zest of half a lemon and the zest of 1 orange.
Then add the juice of half a lemon, the juice of 1 orange and the brandy.
Give it a good mix, cover and leave for an hour to allow the fruit to soak.
After an hour give it another mix, then add the chopped apple and suet and mix.
Then add the sugar, nutmeg, mixed spice and cinnamon and give a really good stir.
Then transfer to a sterilized clean jar and leave to mature for at least 2 weeks before using.
