How to make Lemon Drizzle Muffins

You will need:

For the Muffins:

200g Self-raising Flour

100g Caster Sugar

150ml Milk

70ml Sunflower Oil

1 Egg

2 Lemons (Zest of both and 2tbsp juice)


For the Drizzle:

75g Granulated Sugar

2tbsp Lemon Juice (From the lemons)


Method:

  1. In a bowl, mix together your flour, sugar and the zest of the lemons

  2. Then, in a separate jug, into your milk, mix the oil, egg and 2tbsp lemon juice until well combined.

  3. Then add your wet ingredients to your dry ingredients and mix until its a batter.

  4. Then divide your mixture between 12 cupcake/muffin cases, and bake in a pre-heated oven at Gas Mark 6, 200C or 180C fan assisted for 20 to 25 mins.

  5. Then to prepare the drizzle, simply mix together the 2tbsp lemon juice and the granulated sugar.

  6. Then pour over 1 to 2 tsp of drizzle onto each muffin.
