How to make Hot Sauce
You will need:
300g Chili Peppers (I used a mix of cayenne and Fresho)
500ml Distilled Malt Vinegar
0.5tsp Salt
Method:
Ideally wearing food-safe gloves, cut off the tops of the chilis and roughly chop them, including the seeds, before adding them to the saucepan.
Add vinegar and salt to the saucepan.
Quickly bring the mixture to a boil, then lower the heat and let it simmer for 15 minutes to soften.
Let it cool, then blend using a blender or hand blender.
Strain the mixture through a sieve and pour it into sterile bottles. To sterilize the bottles, fill them with boiling water, leave for 10 minutes, then pour out the water.
Keep in the fridge and use within 1 month.
