You will need:
100g Plain Flour
200g Dark Chocolate
225g Brown Sugar
125g Butter
3 Eggs
1tbsp Cocoa Powder
1 tsp Baking Powder
0.5tsp Salt
5 Creme Eggs
Method:
Melt the dark chocolate and butter together using either a microwave or Bain Marie. Once melted, stir well and set aside to cool.
In another bowl, mix the eggs into the brown sugar one at a time until fully combined. Then whisk until the mixture has doubled in size and is pale in color.
Add the cooled chocolate and butter mixture, and gently fold in the flour to retain as much air as possible.
Sift the flour, cocoa powder, baking powder, and salt into the mixture, and fold in gently again.
Pour the batter into a pre-lined baking tin (mine was 18cm by 28cm) and spread it evenly.
Bake in a preheated oven at Gas Mark 4, 180°C, or 160°C fan-assisted for 30 minutes.
While the brownies are baking, cut the creme eggs in half.
After 30 minutes in the oven, remove the brownies and top with the creme egg halves. Return to the oven for an additional 5 minutes until a toothpick inserted comes out with crumbs.
