How to make Garibaldi Biscuits

You will need:

125g Self-Raising Flour

75g Currants

50g Butter

25g Caster Sugar

2tbsp Milk

1 Egg

1tsp Granulated Sugar


Method:

  1. Firstly, in a bowl, to your flour add your butter and with your fingertips mix until it resembles breadcrumbs.

  2. Then add your caster sugar, and mix.

  3. Then add the egg yolk and again mix really well.

  4. The add the milk a bit at a time until it becomes a dough.

  5. Then on a floured surface, roll out in a rectangle. Cut the rectangle in half.

  6. Sprinkle one half with the currants and put the other half on top, use a rolling pin to sandwich the currants in-between.

  7. Cut into the size biscuits you want then place on a tray lined with baking paper, leaving space between each biscuit as they will expand.

  8. Brush the top of each biscuit with the egg white and sprinkle the granulated sugar on top.

  9. The in a pre-heated oven at Gas 4, 180C or 160 fan assisted bake for about 12 to 15 minutes.

What a great recipe! Really easy if you have a mixer. The dough was perfect, the garilbaldi biscuits were delicious
