How to make Fondant Covered Biscuits

You will need:

275g Plain Flour

100g Butter

100g Caster Sugar

1 egg

1 tsp Vanilla Extract

500g Fondant Icing


Makes approx. 30-34 biscuits.


Method:

1. Firstly in a bowl, cream together your butter and sugar until well combined.

2. Then, add your egg and vanilla extract and mix together until well combined.


3. Then add your plain flour and mix until a dough is formed.

3. Then roll your dough until it is about 1cm thick and cut out your shapes using cookie cutters.


4. Place on a pre-lined baking tray, then bake in a pre-heated oven at Gas Mark 4, 180C or 160C fan assisted for 12-15 mins or until the edges are just starting to get colour.


5. Once the biscuits are cooled, roll out the fondant icing until quite thin and using the same cookie cutters, cut out the shapes for the tops.


6. Using a bit of water, brush the tops of the biscuits then add the cut out fondant shapes. Leave to let the icing set.
