How to make Double Chocolate Shortbread Biscuits

You will need:

175g Plain Flour

50g Caster Sugar

125g Butter

2 tbsp cocoa powder

100g chocolate


Method:

1. Firstly; in a bowl, mix together your flour, cocoa powder and sugar.

2. Then add the butter and using your fingertips mix until it has the consistency of breadcrumbs.

3. Bring the mixture together to form a ball, it may take some time but it will come together.

4. Then on a floured surface, roll out your dough, to about half a cm thick.

5. Then cut out your biscuits into fingers.

6. Place your biscuits on a pre-lined baking tray with baking paper. And using a fork, prick the top of the biscuits.

7. Bake in a preheated oven at Gas Mark 5, 190C or 170C fan assisted for 20 mins. Then allow to cool.

8. Melt the chocolate in a microwave for 30 seconds then mix before microwaving for an additional 20 mins until nearly melted. Then mix until the chocolate until completely melted.

9. Then dip the fingers into the melted chocolate and put back on to the pre-lined baking tray. Put in to the fridge to allow the chocolate to set.
