How to make Damson infused Vodka

You will need:

175g Damsons

90g Caster Sugar

35cl (350ml) Vodka

Method:

1. Firstly, firstly wash the damsons. Then cut the damsons in half and remove the stones and put them into a big mason jar.

2. Then add the sugar and vodka, then put the lid on and shake really well.

3. Leave to infuse for 3 months, shaking the jar sporadically.

4. Then strain out the damsons through a a mesh cloth and bottle the vodka. Use within a year.
