You will need:
2 Egg Whites
100g Caster Sugar
150g Desiccated Coconut
100g Dark Chocolate
1tsp Vanilla Extract
Method:
1. Firstly, in a bowl, whisk together the egg whites and caster sugar for 2 mins until light and the sugar has been completely combined.
2. Stir in the vanilla extract and desiccated coconut and leave to stand for 10 mins.
3. Using a teaspoon, scoop a heaped teaspoon of the coconut mixture and roll into a ball. Then place on a pre-lined baking tray.
4. Then bake in a preheated oven at Gas Mark 3.5, 170C or 150C fan assisted for 15-20 mins until golden. Then allow to cool.
5. Melt the chocolate in a microwavable bowl in the microwave for 30 secs at a time until it is just melted.
6. Then dip the flat bottoms into the chocolate to coat and place back on the baking tray. Any leftover chocolate can be drizzled over the tops.
7. Then pop in the fridge for half an hour to set and enjoy.
