You will need:
300g Plain flour
150g Butter
100g Soft Brown Sugar
1 Egg
1 Teaspoon Baking powder
150g Currants/Sultanas
1 Orange (Juice and Zest)
2tbsp Brandy
2tsp Mixed Spice
1tsp Ground Cinnamon
1tsp Ground Nutmeg
50g Grounds Almonds
Method:
Firstly in a bowl, to your currants add the juice of the orange and the brandy. Give it a good mix then cover and leave to soak for 12 to 24 hours.
Then in a separate bowl to your flour add the soft brown sugar, baking powder, mixed spice, cinnamon, nutmeg and almonds. Then mix until well combined.
Then add the butter and rub in until it resembles breadcrumbs. Then add the fruit and mix until well combined.
Then add the egg and mix until you have a dough.
Then line a baking tray with baking paper. Roll about 2 tablespoons worth of dough into a ball and put on the tray making sure to leave space in between each ball as they will expand as they bake.
Then in a pre-heated oven at Gas Mark 5, 190C or 170C fan assisted bake for 12 to 15 mins until the sides are starting to go golden.
