How to make Chocolate Lollies

You will need:

100g Chocolate (makes about 3 lollies)

Additional:

Sprinkles

Lollypop sticks

Cookie Cutters

To melt the chocolate:

  1. Firstly, chop the chocolate into small pieces.

  2. Then we will temper the chocolate using a cheats method with a microwave so you don't require a thermometer. Put your chopped chocolate into a microwavable bowl. Microwave your chocolate for 30 seconds and mix. Then only melt for additional 10 seconds at a time. Once the chocolate is mostly melted, keep stirring it until it melts completely (by keeping the amount of time heated down we can keep the chocolate under 30C which then allows it to temper and set - if you have a thermometer you can use it to make sure you don't go above 30C).

For easy peasy chocolate lollies:

  1. Once the chocolate is melted. On a prelined baking tray, spoon chocolate in a circle. If using lollypop sticks, add the lollypop stick to the middle of the chocolate circle and using a spoon even out the chocolate on the back.

  2. Add any additional toppings to the top and pop into the fridge for 10 mins to set.

For Chocolate Snowmen lollies:

  1. Using white chocolate, once the chocolate is melted. On a prelined baking tray, spoon the chocolate into a small circle, then below a slightly bigger circle and finally a bigger circle for the bottom. If using lollypop sticks, add the lollypop stick to the middle of the chocolate and using a spoon even out the chocolate on the back.

  2. Add decorations to the snowman, I used chocolate covered raisins or edible silver balls for his buttons and an icing pen for his smile (I did find the icing pen didn't set very well though so if making for a present you might want to use something else so it sets)

  3. Then pop into the fridge for 10 mins to set.

For shaped Chocolate lollies:

  1. Once the chocolate is melted. On a prelined baking tray, spoon chocolate into your cookie cutters. Then top with any toppings you'd like.

  2. Then pop into the fridge for 10 mins to set.

  3. If you want to add the lollypop sticks, once set remove carefully from the cutters. On the prelined baking tray add a bit of melted chocolate and add the lollypop stick. Then add the shaped chocolate to the top and pop back into the fridge for 10mins to set.
