How to make Chocolate Fudge Cupcakes

You will need:

For the Cupcakes:

175g Self Raising Flour

150g Caster Sugar

2 Eggs

150ml Sunflower Oil

150ml Milk

2tbsp Cocoa Powder

2tbsp Golden Syrup

1tsp Baking Powder


For the Icing:

200g Chocolate

100ml Double Cream

50g Icing Sugar

Sprinkles


Method:

1. Firstly, for the cupcakes. In a bowl, mix together your sunflower oil, milk, golden syrup and eggs.

2. In a separate bowl, mix together your flour,, caster sugar, baking powder and cocoa powder. Then make a well in the centre.

3. Add your wet ingredients to your dry and mix well until well combined.

4. Then divide your mixture between 12 cupcake cases, and bake in a pre-heated oven at Gas Mark 4, 180C or 160C fan assisted for 20-25 mins.

5. To make the icing, melt the chocolate in the microwave.

6. Then stir in the cream and icing sugar.

7. Using a whisk, whisk for 5 mins until fluffy

8. Then decorate the top of each cupcake with your icing and sprinkles.
