1 min read

You will need:

For the Cake:

300g Self-raising flour

300g Caster Sugar

300g Margarine/butter

3 Bananas

3 eggs

2tsp Cinnamon

For the topping:

200g Icing Sugar

1tbsp Cocoa Powder

2tbsp Milk

(Optional) 30g Banana Chips

Method:

  1. To make the cake, start by creaming the butter and caster sugar together in a bowl until they are well blended.

  2. Next, add the eggs and mix thoroughly.

  3. In another bowl, mash the bananas, then incorporate them into the cake batter, mixing well.

  4. Add the self-raising flour and cinnamon, and mix until everything is well combined.

  5. Transfer the batter into a pre-greased and lined tin (I used a 33cm by 23cm by 6cm tin).

  6. Bake in a pre-heated oven at Gas Mark 5, 190°C, or 170°C for fan-assisted ovens, for approximately 40-45 minutes. To check if the cake is fully cooked, insert a toothpick into the center; if it comes out clean, the cake is ready.

  7. For the icing, in a bowl, add cocoa powder to the icing sugar and mix well.

  8. Then add the milk and mix until smooth and combined, creating a paste that coats the back of a spoon.

  9. Spread this icing over the cake, and while it is still wet, sprinkle with banana chips if desired.

  10. Finally, cut into desired piece sizes and enjoy.
