How to make baked scotch eggs

You will need:

1 pack (8) sausages

150g Breadcrumbs

7 Eggs


Method:

1. Firstly boil 6 of your eggs until they are hard boiled, about 7-8 minutes is ideal as you don't want them too hard boiled. Once cooked and cooled; peel the shells off.


2. Beat the remaining egg, and put in a bowl.


3. Remove the skins from the sausages, then wrap 1 and a third of a sausage around one of the boiled eggs. Then dip into the beaten egg, then coat in the breadcrumbs. Repeat for all of the boiled eggs.


4. In a pre-heated oven at Gas Mark 6, 200C or 180 Fan assisted; bake for 35 mins.
