You will need:
140g Margarine
140g Demerara Sugar
140g Self raising flour
1tsp baking powder
2 eggs, beaten
300g chopped apples (and additional apple slices to decorate)
1 tbsp lemon juice
1 tsp ground cinnamon
Method:
Firstly line a 2lb loaf tin (9in by 5in by 3in) with margarine and baking paper.
Then n a saucepan stew your apples, lemon juice and cinnamon for 3-4 minutes. Once golden in colour remove from the heat and allow to cool.
In a bowl cream together your margarine and sugar.
Then add your eggs and mix well.
Then add the flour and baking powder then mix until well combined.
Then add your cooled stewed apples and mix.
Then put your batter into your pre-prepared loaf tin, and add the slices of apple to the top.
Bake in a pre-heated oven at Gas Mark 4, 180C or 160C fan assisted for 45 mins. Or until a skewer into the bread comes out clean.
