How to make a Blackberry and Orange Loaf Cake

You will need:
For the Cake:
225g Self-raising flour
175g Caster Sugar
175g Margarine/butter
3 eggs
200g Blackberries
1 Orange
For the topping:
100g Icing Sugar
1tbsp Orange Juice
Method:
To make the cake, begin by creaming the butter and caster sugar in a bowl until they are well combined.
Then, add the eggs and mix well.
Zest the orange into the cake mixture and add all but 1.5 tbsp of the orange juice, keeping this amount for the icing.
Mix in the self-raising flour until the batter is smooth.
Carefully fold in the blackberries until they are evenly spread throughout.
Transfer the batter into a pre-greased and lined 2lb loaf tin.
Bake in a preheated oven at Gas Mark 4, 180°C, or 160°C for fan ovens, for about 50 minutes to 1 hour. To ensure the cake is done, insert a toothpick into the center; if it comes out clean, the cake is ready.
Let the cake cool slightly.
For the icing, mix the icing sugar with 1 tbsp of orange juice in a bowl until smooth, ensuring it coats the back of a spoon.
Spread the icing over the cake.
Slice into desired portions and enjoy.
