You will need:
500g Runner Beans (chopped)
500g Potatoes (peeled and chopped)
1ltr Vegetable or chicken Stock
1 Onion (diced)
4 Garlic Cloves (diced)
1tsp Thyme
1tsp olive oil
Salt and Pepper to taste
Method:
Firstly, if using stringy runner beans, you will need to peel the top layer off the bean (see video for details).
In a saucepan, over a low to medium heat, fry the onions and garlic in your olive oil for about 2 to 3 minutes until soft.
The add the runner beans, then sweat again for 2 to 3 mins.
Then add the potatoes, thyme, salt, pepper and stock and bring to a rolling boil.
Then reduce the heat, and simmer for about 20 to 25 minutes until the potato is super soft.
Then blend up the soup until pureed, be very careful with hot soup as you can burn yourself if it splashes.
Then enjoy.
