How to make Leek and Potato Soup

You will need:

500g Leeks (Chopped)

500g Potatoes (chopped)

1 Onion (diced)

3 Garlic Cloves (diced)

1tsp Oil

1.5 Litre Vegetable Stock

1 tsp Mustard


Method:

  1. In a saucepan, over a medium heat, add the leeks, onion and potatoes then turn down the heat to low and pop a lid on. Stir every now and then for 10 mins.

  2. Then add the garlic, mustard and stock and bring to a rolling boil. Turn down to a simmer and simmer for 15 mins.

  3. Then blend up the soup until pureed, be very careful with hot soup as you can burn yourself if it splashes. It's best if you let it cool first.

  4. Then enjoy.
