You will need:
400g Peas (shelled)
500g Potatoes (chopped)
1 Onion (diced)
1tsp Oil
1 Litre Vegetable Stock
2 tbsp Mint Sauce (or 2tbsp dried mint or 4tbsp diced fresh mint)
Method:
In a saucepan, over a low heat, fry the onions in the oil for about 5 minutes until soft.
The add the potatoes and stock and bring to a rolling boil and boil for 8 mins.
Then add the peas and mint sauce, reduce the heat, and simmer for about 20 to 25 minutes.
Then blend up the soup until pureed, be very careful with hot soup as you can burn yourself if it splashes. It's best if you let it cool first.
Then enjoy.
