You will need:
500g Pumpkins (chopped)
1 Carrot (chopped)
1 Onion (diced)
2 Garlic Cloves (diced)
500ml Vegetable stock
1tbsp vegetable oil
Method:
In a saucepan, over a medium heat, fry your onions and carrots in your vegetable oil for about 5 to 10 minutes until soft.
The add your pumpkins, garlic cloves and your vegetable stock and simmer for about 20 minutes until the pumpkin is super soft.
Then blend up the soup until pureed, be very careful with hot soup as you can burn yourself if it splashes.
Then add salt and pepper to taste, then enjoy.
