How to make Lemon Bars

You will need:

For the biscuit base:

175g Plain Flour

125g diced butter

50g Demerara Sugar


For the topping:

200g Caster Sugar

25g Plain Flour

3 Eggs

Zest of 3 lemons and 200ml lemon juice (Approx 4 to 5 large lemons)


Method:

1. Firstly to make the biscuit base; grease a tin (approx 28cm by 18cm) with baking paper.


2. Sieve 175g plain flour into a bowl and add 50g demerara sugar and mix well.


3. Then add 125g butter and using your fingertips mix until it has the consistency of breadcrumbs. Bring the mixture together to form a ball.


4. Then add the mixture into the prepared tin and spread out evening. Then prick the top with a fork.


5. Bake in a preheated oven at Gas Mark 5, 190C or 170C fan assisted for 20 mins. Then allow to cool.


6. For the topping; in a bowl, add 5200g Caster Sugar, 25g Plain Flour and the zest of 3 lemons and mix until combined.


7. Then add the 3 eggs and 200ml lemon juice and whisk until well combined.


8. Then having turned down the oven to Gas 4, 180C or 160C Fan for 20 to 25mins or until the top has set


9. Cool in the tin then as an additional sieve the top with icing sugar.
