How to make Chunky Vegetable Soup

You will need:

600g Vegetables (I used 200g carrots, 200g celery and 200g swede)

200g Potatoes

1 Onion

1 Leek

4 Garlic Cloves

1tsp Vegetable oil

1 Litre Stock (either chicken or vegetable)

1 tsp Basil

1 tsp Parsley


Method:

  1. In a saucepan, over a low heat, fry the onions, leek and garlic in your vegetable oil for about 5 minutes until soft.

  2. The add the potatoes, and vegetables and sweat again for a further 5 mins.

  3. Stock, Basil and Parsley, stir and bring to a rolling boil.

  4. Then reduce the heat, and simmer for about 25 minutes.

  5. Check your potatoes and swede and soft, then enjoy.
