How to make Carrot and Coriander Soup

You will need:

600g Carrots (chopped into chunks)

200g Potatoes (Diced)

2 Onion (Diced)

1tsp Vegetable oil

1 Litre Stock (either chicken or vegetable)

1.5 tsp Dried Coriander Leaf


Method:


  1. In a saucepan, over a low heat, fry the onions in your vegetable oil for about 5 minutes until soft.

  2. The add the carrots, potatoes, Coriander and stock and bring to a rolling boil.

  3. Then reduce the heat, and simmer for about 25 minutes.

  4. Then blend up the soup until pureed, be very careful with hot soup as you can burn yourself if it splashes. It's best if you let it cool first.

  5. Then enjoy.
