You will need:
350g Brussel Sprouts
700g Potatoes (chopped into chunks)
1 Onion (Diced)
3 Garlic Cloves (Diced)
1tsp Vegetable oil
1 Litre Stock (either chicken or vegetable)
1 tsp Basil
Half tsp Chives
Method:
Firstly, chop the Brussel sprouts into quarters.
In a saucepan, over a low heat, fry the Brussel sprouts, onions and garlic in your vegetable oil for about 5 minutes until soft.
The add the potatoes, chives, basil, and stock and bring to a rolling boil.
Then reduce the heat, and simmer for about 20 minutes.
Then blend up the soup until pureed, be very careful with hot soup as you can burn yourself if it splashes. It's best if you let it cool first.
Then enjoy.
