How to make Black Pudding Scotch Eggs

You will need:

300g Sausages (either sausages or sausage meat)

150g Black Pudding

100g Breadcrumbs

7 Eggs


Method:

1. Firstly boil 6 of your eggs until they are hard boiled, about 6 minutes is ideal as you don't want them too hard boiled. Once cooked and cooled; peel the shells off.

2. If using sausages, remove the skins from the sausages and crumble in the black pudding. Mix well until well combined

3. Beat the remaining egg, and put in a bowl.

4. Then then wrap one of the boiled eggs with the sausage mix. Then dip into the beaten egg, then coat in the breadcrumbs. Repeat for all of the boiled eggs.

4. In a pre-heated oven at Gas Mark 6, 200C or 180 Fan assisted; bake for 35 mins.
