How to make a Blueberry Loaf Cake with Crumb top
You will need:
For the Cake:
175g Self-raising flour
175g Caster Sugar
175g Margarine/butter
3 eggs
200g Blueberries
For the topping:
75g Plain Flour
50g Caster Sugar
50g Butter
Method:
To prepare the cake, start by creaming the butter and caster sugar in a bowl until thoroughly combined.
Next, incorporate the eggs and mix thoroughly.
Add the self-raising flour and mix until the batter is smooth.
Gently fold in the blueberries until they are evenly distributed.
Pour the batter into a pre-greased and lined 2lb loaf tin.
For the crumb topping, combine the plain flour and caster sugar until well mixed.
Add the cubed, room temperature butter, and use your fingertips to blend it into the flour until it resembles breadcrumbs.
Sprinkle this mixture over the top of the cake in the loaf tin.
Bake in a preheated oven at Gas Mark 4, 180°C, or 160°C for fan ovens, for approximately 1 hour 15 to 1 hour 25 mins. Check if the cake is done by inserting a toothpick into the center; if it comes out clean, the cake is ready.
Cut into desired slices and enjoy.
