You will need:
225g Plain Flour
100g Caster Sugar
100g Butter
1 Egg
1 tsp Vanilla Extract
50g Ground Almonds
14 Blanched almonds (20g approx)
Makes approx. 14 biscuits.
Method:
Firstly in a bowl, cream together your butter and sugar until well combined.
Then, add your egg and vanilla extract and mix together until well combined.
Then add your ground almonds and plain flour and mix until a dough is formed.
Then taking some of the dough, roll into a long sausage.
Push a blanched almond into the end of the biscuit, to create the fingernail.
Then using a knife, create 3 lines until the almond nail and 3 halfway down the sauage to create the knuckles.
Place on a pre-lined baking tray, leaving space between each biscuit for them to expand. Then bake in a pre-heated oven at Gas Mark 4, 180C or 160C fan assisted for 12-15 mins or until the edges are just starting to get colour.
