You will need:
3tbsp Aquafaba (chickpea water)
1tbsp clear vinegar
250ml Neutral oil
1tsp mustard
0.5tsp salt
Equipment - Hand blender
Method:
In a jug, add your aquafaba, vinegar, mustard and salt. Blend for a minute to combine.
Then add your oil a bit at a time, try to add this underneath the blender. Blend for a minute at a time until it thickens. You might not need all the oil, add it until it is the right thickness.
Then put the mayo into a jar and store in the fridge, it should last for a week to 2 weeks.
