How to make Vegan Banana Muffins

You will need:

200g Self Raising Flour

75g Caster Sugar

1 Banana

150ml Soya Milk

70ml Vegetable Oil

1tbsp Mixed spice (additional)


Method:

1. Firstly, mash your banana.


2. Then into your mashed banana add your soya milk and oil, and mix until well combined.


3. In a separate bowl, mix together your flour, sugar and, if using, mixed spice.


4. Then add your wet ingredients to your dry ingredients and mix until its a batter.


5. Then divide your mixture between 12 cupcake/muffin cases, and bake in a pre-heated oven at Gas Mark 6, 200C or 180C fan assisted for 20 mins.
