You will need:
200g Plain Flour
0.5tsp Salt
125g Unsalted Butter
Approx 100ml Cold water
Method:
Note: the key to this recipe is keep everything as cold as possible, so I keep my bowl in the fridge for 30 mins beforehand to help.
Mix together your flour and salt. Then add the butter in small chunks, and mix so the butter is coated in the flour, do not mix in.
Then mix in the water a little at a time, you might not need all of it. Add water until it becomes a dough.
On a pre-floured surface, roll out the pastry into a long rectangle. Then fold the ends into the middle. Roll out into a long rectangle again but the opposite sides to last time and fold the ends back into the centre. Repeat 5 times.
If your pastry becomes sticky, pop in the fridge for 20 mins until cooled down.
Once folded back in 5 times, pop the pastry in the fridge for 30 mins then it is ready to use.
