How to make Redcurrant Muffins

You will need:

200g Self Raising Flour

100g Caster Sugar

1 Egg

150ml Milk

70ml Oil

150g Redcurrants (Fresh or frozen)


Method:

1. In a bowl, mix together your flour and sugar.

2. Then, in a separate jug, into your milk, mix the oil and egg until well combined.

3. Then add your wet ingredients to your dry ingredients and mix until its a batter.

4. Then add your redcurrants and mix until well distributed.

5. Then divide your mixture between 12 cupcake/muffin cases, and bake in a pre-heated oven at Gas Mark 6, 200C or 180C fan assisted for 20 mins.
