How to make Peanut Butter Cups

You will need:

200g Milk Chocolate

125g Peanut Butter (either chunky or smooth)

1 tbsp icing sugar

0.25tsp Salt (Optional)


Method:

  1. Firstly, chop half the chocolate into small pieces.

  2. Then we will temper the chocolate using a cheats method with a microwave so you don't require a thermometer. Put your chopped chocolate into a microwavable bowl. Microwave your chocolate for 30 seconds and mix. Then only melt for additional 10 seconds at a time. Once the chocolate is mostly melted, keep stirring it until it melts completely (by keeping the amount of time heated down we can keep the chocolate under 30C which then allows it to temper and set - if you have a thermometer you can use it to make sure you don't go above 30C).

  3. Then using a pre-prepared cupcake tray lined with cupcake cases, spoon the chocolate into each cupcake case. Making sure the bottom is covered in a thin layer.

  4. Then to make the filling, mix together the peanut butter, icing sugar and salt if using.

  5. Then spoon into the middle of each chocolate disc.

  6. Then chop the remaining chocolate into small chunks, and melt using the same cheats way of tempering by microwave.

  7. Then spoon the melted chocolate into the cases, making sure the peanut butter is covered. Pop these in the fridge for an hour to allow to harden.

  8. Then remove from the cases and enjoy.
