You will need:
300g Plain flour
150g Margarine
150g Caster Sugar
1 Egg
1 Teaspoon Baking powder
80g Mini Eggs
50g Chocolate Chips
Method:
Firstly, crush your mini eggs using a rolling pin. You still want them to be good sized chunks of mini eggs.
Then in a separate bowl, cream together your margarine and sugar.
Then add your egg and mix well.
Then add the flour and baking powder and mix a little bit but so it is still a crumbly mixture.
Then add your chocolate chips, and having reserved a few larger pieces of the mini eggs, add the mini eggs too and mix together until it forms a dough.
Then line a baking tray with baking paper. Roll about 2 tablespoons worth of dough into a ball and put on the tray making sure to leave space in between each ball as they will expand as they bake.
Top each cookie with a piece of the mini egg you reserved.
Then in a pre-heated oven at Gas Mark 5, 190C or 170C fan assisted bake for 19 to 20 minutes
