You will need:
For the Pastry:
200g Plain Flour
130g Butter
1 Egg
1 tbsp water
For the Filling:
100g Grated Cheddar Cheese
2 Eggs
150ml Double Cream
1 Onion (Sliced)
1tbsp Oil
Salt and Pepper to taste
Method:
Firstly we will make the pastry. In a bowl, mix together your flour and butter with the tips of your fingers until it resembles breadcrumbs.
Then add the egg and mix. As the mixture comes together as a dough you may need to add water to help bring it together, only add a little bit at a time. Then chill in the fridge for about 30 mins.
To a frying pan over a low heat, add the oil and onions and fry for 10 mins until the onions are slightly translucent. Then pop to one side.
Then on a pre-floured work surface, roll your pastry out. You want to have a thickness of about half a cm.
Then prepare your cupcake tray by greasing with butter and lining each hole with a strip of baking paper.
Then cut out your pastry using a circle cutter that is slightly bigger than your cupcake tray and line each hole in your tray with them.
Then to make the filling, mix together the double cream, eggs, salt and pepper until well combined.
Fill the bottom of each pastry case with the fried onions then top with the grated cheese and then fill each case with the cream mixture. The top each one with any remaining cheese
Bake in a pre heated oven at Gas Mark 5, 190C, 170 Fan bake for 20 to 25 minutes.
