You will need:
200g Plain Flour
130g Butter
2 Eggs
1 tbsp Caster Sugar
1 tbsp Granulated Sugar
1 jar (411g) Mincemeat
Method:
Firstly we will make the pastry. In a bowl, mix together your flour and caster sugar. Then mix in the butter with the tips of your fingers until it resembles breadcrumbs.
Then add one of the eggs and mix. As the mixture comes together as a dough you may need to add water to help bring it together, only add a little bit at a time.
The on a pre-floured work surface, roll your pastry out.
Then prepare your cupcake tray by greasing the sides and laying a strip of baking paper across each hole.
Then cut out your pastry using a circle cutter that is slightly bigger than your cupcake tray and line each hole in your tray with them.
Then fill each case with mincemeat.
Then cut out the tops of the mince pies, I used a star cookie cutter as a decorative finish but you can use a circle cutter that is the same size as the hole.
Beat the remaining egg and brush around each case, the top each pie with a top.
Then using the remaining beaten egg, brush the tops with the egg.
Make sure if your tops are completely sealed you put a hole in the middle to allow steam to escape.
In a pre heated oven at Gas Mark 6, 200C, 180 Fan bake for 15 to 20 minutes, until the tops are golden.
