You will need:
200g Plain Flour
130g Butter
1 Egg
1 tbsp Caster Sugar
1 tbsp water
1 jar (411g) Mincemeat
100ml Milk (Optional)
Method:
Firstly we will make the pastry. In a bowl, mix together your flour and sugar. Then mix in the butter with the tips of your fingers until it resembles breadcrumbs.
Then add the pre beaten egg and mix. As the mixture comes together as a dough you may need to add water to help bring it together, only add a little bit at a time. Then chill in the fridge for about an hour.
The on a pre-floured work surface, roll your pastry out. You want to have a thickness of about half a cm.
Then prepare your cupcake tray by flouring it.
Then cut out your pastry using a circle cutter that is slightly bigger than your cupcake tray and line each hole in your tray with them.
Then fill each case with mincemeat.
Then cut out the tops of the mince pies, I used Christmas cookie cutters as a decorative finish but you can use a circle cutter that is the same size as the hole. Just press down the tops into the case pastry.
Then as an optional, you can brush the tops with milk.
Make sure if your tops are completely sealed you put a hole in the middle to allow steam to escape.
In a pre heated oven at Gas Mark 6, 200C, 180 Fan bake for 15 to 20 minutes, until the tops are golden.
