How to make Lemon Shortbread

You will need:

200g Plain Flour

50g Demerara Sugar

125g Butter

1 Lemon


Method:

1. Firstly; in a bowl, mix together your flour and sugar.

2. Then grate the zest of the lemon into the flour and mix.

3. Juice the lemon and measure out 1 tbsp

4. Then add the butter to the flour mix and using your fingertips mix until it has the consistency of breadcrumbs.

5. Then add the tbsp of lemon juice.

6. Bring the mixture together to form a ball, it may take some time but it will come together.

7. Then on a floured surface, roll out your dough, to about a cm thick.

8. Then cut out your biscuits either using a cookie cutter or you can use a knife to cut into fingers.

9. Place your biscuits on a pre-lined baking tray with baking paper. And using a fork, prick the top of the biscuits.

10. Bake in a preheated oven at Gas Mark 5, 190C or 170C fan assisted for 20 mins. Then allow to cool.
