You will need:
250g Plain Flour
100g Caster Sugar
150g Butter
1 Egg
1 tsp Vanilla Extract
250g Jam
Method:
Firstly, in a bowl, cream together your butter and sugar.
Then add the egg and vanilla and mix together.
Then add the flour and mix until it forms a dough. Then ideally chill for an hour.
Roll out your biscuit dough on a floured surface. until its about half a cm thick.
The cut out your biscuits, I used a 5cm fluted cutter. You want to cut an even number of biscuits.
The using a small cutter (ideally a heart but you can use any you like) cut out the middle of half of the biscuits.
Place your biscuits on a tray lined with baking paper, leaving space between each biscuit as they will expand.
The in a pre-heated oven at Gas 4, 180C or 160 fan assisted bake for about 12 -15 minutes or until they are a light golden colour.
Once the biscuits are cooled, put a teaspoon of jam on a biscuit with no hole and press a biscuit with a hole on top to sandwich them together
