You will need:
For the Cupcakes:
175g Self Raising Flour
175g Caster Sugar
175g Margarine
3 Eggs
2 tbsp Cocoa Powder
1 tbsp Orange Juice
The zest of an Orange
For the filling:
100g Orange Marmalade
For the buttercream:
200g icing sugar
90g Unsalted butter
2 tbsp Orange Juice
12 Jaffa Cakes
Method:
For the cupcakes; firstly in a bowl, cream together your margarine and sugar.
Then add your eggs, orange juice and orange zest and mix well.
Then add the flour and cocoa powder and mix until well combined.
Then divide your mixture between 12 cupcake cases, and bake in a pre-heated oven at Gas Mark 5, 190C or 170C fan assisted for about 16 to 20 mins.
For the filling; you want to core the center of your cupcakes, keeping the tops to one side. And fill the center of each cupcake with some of the filling. Then put the tops back on the cupcakes.
For the buttercream; cream together the icing sugar and butter.
Then gradually add the orange juice in until it is a spreadable consistency. Then put into the piping bag and pipe on to the cupcakes.
The cut the jaffa cakes into half and pop on top of the cupcakes in the icing so they look like butterflies.
