How to make hot cross buns

You will need:

For the buns:

500g bread flour

250ml milk

60g butter

7g yeast sachet

1tsp salt

1tsp mixed spice

1tsp cinnamon

50g caster sugar

150g sultanas (you can use raisins)


For the cross:

3tbsp plain flour

1tsp sugar

3tbsp water


For the glaze:

Honey


Method:

1. Firstly in a saucepan, melt your butter into your milk over a low heat. The allow to cool until it is about room temperature.


2. In a separate bowl, mix together your bread flour, salt, mixed spice, cinnamon and caster sugar. Then stir in your yeast.


3. Then add the egg and milk mixture and mix until it forms a dough.


4. On a floured surface start to knead the dough (to knead use the palm of you hand to push into the dough, pick up and rotate, then repeat - see video for a better idea). After a couple of minutes start to add the sultanas while kneading. You will need to knead the dough for a total of 10 minutes. Once kneaded the dough should be smooth and elastic.

5. Leave your dough to rise in an oiled bowl that has been covered either with an oiled piece of clingfilm or a clean tea towel. You will need to leave your dough to rise for about an hour or until doubled in size in a warm place.

6. Once risen, on a floured surface knock the dough back for a couple of minutes.

7. Then divide your dough into 12 equal pieces, and roll them into balls. Then place on a floured baking tray making sure to leave plenty of space between each piece as they will expand.

8. Cover with your oiled clingfilm or clean tea towel and leave to rise again in a warm place for 30 minutes to an hour.


9. For the cross, mix together the flour, sugar and water until well combined.


10. Once the buns have risen, you will want to add the cross on top of each bun. Either by using a spoon or ideally a piping bag.

11. Then bake in a pre-heated oven at Gas Mark 7, 220C or 200C fan assisted for 15-20 mins.

12. Then with the buns still warm, brush each bun with the honey to glaze.
