How to make Homemade Creme Eggs

You will need:

150g Milk Chocolate

150g Fondant

1 tbsp hot water

Yellow Food colouring


Method:

  1. Firstly, set aside a couple of the squares of chocolate (we will use these later to seal the 2 sides of the egg together). Then chop the remaining chocolate into small pieces.

  2. Then we will temper the chocolate using a cheats method with a microwave so you don't require a thermometer. Put your chopped chocolate into a microwavable bowl. Microwave your chocolate for 30 seconds and mix. Then only melt for additional 10 seconds at a time. Once the chocolate is mostly melted, keep stirring it until it melts completely (by keeping the amount of time heated down we can keep the chocolate under 30C which then allows it to temper and set - if you have a thermometer you can use it to make sure you don't go above 30C).

  3. Then spoon the chocolate into each egg mould and coat the sides. Ideally you will use a silicone mould as they will be easier to remove, but if your using a hard plastic mould pop a bit of oil in the moulds before adding the chocolate to allow it to come out later.

  4. Pop the shells in the fridge to set. I popped the leftover melted chocolate back in the microwave for 10 seconds once the egg shells had set so I could fill in any missing gaps or thin parts of the shells, then pop back in the fridge to harden again.

  5. Then to make the filling, grate the fondant.

  6. Then add the hot water (being careful not to burn yourself), and mix until the fondant turns creamy.

  7. Spoon about a quarter of the fondant into a separate bowl and mix in the colouring until its a yolk colour.

  8. Then remove the egg shells from the fridge and spoon the white fondant into each half, then adding a spoon of yellow fondant to the middle.

  9. Then carefully remove the shells from the mould.

  10. Then having chopped the remaining chocolate into small pieces, melt in the microwave for 10 seconds only (it won't need much more than this due to the amount). Then either pipe or spoon the melted chocolate onto one half and attached the other half on, filling in any gaps with the melted chocolate

  11. Then enjoy.
