You will need:
200g Self Raising Flour
100g Caster Sugar
1 Egg
300ml Milk
70ml Oil
4 Green tea bags
3 tbsp Lemon Curd
Method:
Firstly, in a saucepan over a low heat, simmer your milk and the tea bags for 10 mins.
In a bowl, mix together your flour and sugar.
Then remove the tea bags from the milk and measure how much milk is left we need 150ml for the recipe. So either use 150ml of the mixture or if you need to top up add additional milk
Then to your milk add the lemon curd, oil and eggs and mix well.
Then add your wet ingredients to your dry ingredients and mix until its a batter.
Then divide your mixture between 12 cupcake/muffin cases, and bake in a pre-heated oven at Gas Mark 6, 200C or 180C fan assisted for 20 - 25 mins.
