You will need:
Pastry:
500g Plain Flour
1Tsp Salt
200g Lard
150ml Water
1 Egg
Filling:
4-6 Boiled Eggs
300g Pork Mince
75g Bacon (Diced)
300g Sausage meat
1 Tsp Black Pepper
1 Tsp Garlic Granules
1 Tsp Thyme
1kg loaf tin (about 10x20cm base measurement)
Method:
Firstly grease the loaf tin with lard and line with baking paper.
We will bring together the filling. In a bowl, mix together your pork mince, pre chopped bacon, Sausage meat, pepper, garlic granules and thyme. Give it a really good mix.
Then we will make the pastry, in a separate bowl, mix together your flour and salt. Then make a well in the center of the bowl.
Then in a saucepan, over a low heat, mix together your water and lard until your lard has completely melted.
Then allowing the water and lard to cool enough so it can be handled. Add the water and lard to the flour and salt and mix together until a dough has formed. If you dough cools you won't be able to work with is as it will set hard, if this happens, pop it in the microwave for 30 seconds and it should be warm enough to work with.
Flour your work surface, and roll out 2/3rds your dough so it fits the loaf tin. Then roll out the remaining dough so it will fit the top.
Then fill with half the meat mixture. Then add the eggs on top lengthways, you can either slice a little of the top of each egg to sit them together or slice just before the yolk depending on how you like your gala pie.
Then top the eggs with the remaining meat mixture.
Then beat your egg, and brush around the top of the pastry with it. Then attach the lid and press around the edge with a fork to seal it. Then brush the top of the pie with the remaining beaten egg.
Put a couple of holes into the top of the pie, this allow the steam to escape.
Then in a preheated oven at Gas 4, 180C, 160 fan bake for 1 hour 30 mins to 1 hours 45 mins.
