How to make Custard Tarts

You will need:

For the Pastry:

200g Plain Flour

1tbsp Caster Sugar

130g Butter

1 Egg White

1tbsp Water


For the Filing:

400ml Full Fat Milk

4 Egg Yolks

50g Caster Sugar

1tsp Ground Nutmeg


Method:

  1. Firstly, for the pastry, in a bowl mix together your flour and your butter with the tips of your fingers until it resembles breadcrumbs.

  2. The add the egg white and mix together, add a half a teaspoon of water as required until it comes together.

  3. Then on a pre-floured surface, roll out your pastry until half a cm thick.

  4. Grease a muffin tray and lay a piece of baking paper across each hole, then using a cookie cutter larger than the muffin tray, cut out the pastry and line each hole. Pop to one side while we make the filling.

  5. For the filling, to the egg yolks add the sugar and whisk together until pale and creamy.

  6. Then warm the milk until it is around body temperate, and add to the egg yolks and beat again until well combined.

  7. Then the filling to the pastry cases, and sprinkle the tops with the ground nutmeg.

  8. Bake in the oven still at Gas 4, 10C, 160 Fan for 25 to 30 mins.
