You will need:
For the filling:
150g Raspberries, Frozen or Fresh
300g Apples, peeled and chopped
1 tbsp lime juice
2 tbsp sugar
20g butter
1 tbsp Cornflour
For cake top:
100g butter or Margarine
100g Self raising flour
100g caster sugar
2 eggs, beaten
2 tbsp Cocoa Powder
1 tbsp water
Method:
1. Firstly, in a saucepan add your apples, Raspberries and 1 tbsp lime juice Stir together, cover the saucepan and put it on a low heat for about 5 minutes until the apples are soft.
2. Then add 2 tbsp sugar and 20g butter and mix until well combined. Then allow to cool as we make the topping.
3. In a bowl, cream together the butter and sugar until well combined.
4. Then add the beaten egg and stir in.
5. Then add the self-raising flour and cocoa powder, and mix until well combined.
6. The finally add the water and stir again until it is all combined.
5. Then put the apple mixture into an ovenproof dish, then pour the cake batter over the top.
6. Then bake in a pre-heated oven at Gas Mark 4, 180C or 160C fan assisted for about 35 minutes, or until the top is golden.
7. To test that the cake is cooked all the way through, use a toothpick to put into the middle of the cake and if it come out clean it is ready.
