You will need:
For Biscuits:
250g Plain Flour
100g Caster Sugar
150g Butter
1 Egg
2 tbsp Cocoa Powder
For Filling:
125g Peanut Butter (either crunchy or smooth)
1tbsp Icing Sugar
Method:
Firstly, in a bowl, to your self raising flour add your caster sugar and cocoa powder and mix together.
Then add the butter and mix in with the tips of your fingertips until it resembles breadcrumbs.
Then add the egg and mix until a dough has formed.
Roll out your biscuit dough on a floured surface, until its about half a cm thick.
Then cut out your biscuits. You want to cut an even number of biscuits.
Place your biscuits on a tray lined with baking paper, leaving space between each biscuit as they will expand.
The in a pre-heated oven at Gas 4, 180C or 160 fan assisted bake for about 12 -15 minutes.
While the biscuits are cooling we will make the filling. In a bowl, to your peanut butter add your icing sugar and mix until well combined.
Once the biscuits are cooled, put a teaspoon of filling on a biscuit and press 2nd biscuit on top to sandwich them together.
